There are few things more elegant than a masterfully crafted glass of Rosé Champagne. For good reason, Billecart-Salmon Brut Rosé has become the benchmark in the category. Blending the classic trio of Chardonnay, Pinot Meunier, and Pinot Noir, what makes this wine truly special is the quality of the grapes. Exclusively sourced from Billecart’s home village of Mareuil-sur-Aÿ, the wine features massal-selected Pinot Noir from vines aged 60 to 80 years. Harvested at optimal ripeness for red wine—around 12% potential alcohol—the grapes are de-stemmed and cold macerated before fermentation. It is this carefully crafted Pinot that gives Billecart Rosé its distinctive character, though it also limits production. Billecart-Salmon Brut Rosé Champagne ($84.99) 94 points Jeb Dunnuck: "The NV Champagne Brut Rose is an attractive pale salmon hue, with a fresh perfume of wild strawberry, ripe peach, white and red flowers, a hint of tropical fruit, and grapefruit. The palate is rounded, with fruit up front and through the mid-palate, and it has a silky and fresh lift. There is a wonderful ease and drinkability to this wine, which delivers balance and finesse. A pretty strawberries-and-cream nose that leads straight to raspberries galore in the mouth. Blood orange, too, with a suggestion of tamarind chutney. Frankly fruity and frankly delicious. The balance is just right for food in fact the wine was surprisingly good with a rich, slow-cooked pheasant red-wine casserole, and equally good with roasted tomato-and-courgette frittata the following day. I find it elegant and balanced every time that I have it, and the blushing pink color is always perfect. The supply of this wine is strictly limited by the amount of old, massal selected Pinot Noir in one village- Mareuil-sur-Ay, that Billecart has access to. It is this tiny villages best produce that makes the red wine that gives this nectar its color, bouquet and timeless elegance. I like the wine best as an aperitif, the only thing it need to pair with is a good glass. The Brut Rose, soon to be called "Le Rose," is a blend of 43% Chardonnay, 33% Pinot Noir, and 24% Meunier, but now incorporates a perpetual blend (43%, 2014-2018) for the first time, adding depth and complexity, and the dosage has dropped from 9g/l to 5.1g/l, resulting in a much drier and more refined style of champagne. In addition, the base vintage (57%) is from the fantastic 2019 "solar" harvest, which produced ripe grapes with high levels of acidity. Wines were fermented in stainless steel tanks went through partial malolactic fermentation to preserve the freshness of the 2019 vintage. Disgorged at the end of 2022.
