When we launched our French-made knives in 2018, we set out to do something different: develop knives that were a perfect combination of the balance of German knives, and the cutting precision found in traditional Japanese knives.
After years of continuing innovation and exploration, I’m excited to introduce the next generation of our French-made culinary knives, now enhanced with ABT™ [Asymmetric Blade Technology]—a significant leap forward in blade technology that creates a sharper, more precise blade that holds its edge for longer.
ABT™ is a breakthrough sharpening process that uses micron-precision robotics and laser measurement to create an ultra-fine, ultra-consistent edge. Using the industry standard CATRA ISO 8442-5 test that measures both initial cut and edge retention performance, we've found our new blades to be nearly twice as sharp as the competition (+87% improvement), while holding its edge for almost twice as long (+96.4% improvement).
