- Spinello -

Its name comes from the Tuscan herbal liqueur “Spinello” made with sea-buckthorn berries, with which this cheese is treated. Its orange color is given by Annatto, a natural plant-based coloring, which also corresponds to the liqueur's original color. Since Annato is a natural dye, the rind is edible.
The "Spinello" is a two-milk cheese, made from mixed cow and goat milk. The very thin rind is washed with Spinello liqueur by following several steps; then the cheese is double-wrapped to preserve the fragrance and scent that it had acquired during the refining process.
"Spinello" won the first place in the soft cheese category in the contest for cheese affineurs “Stupore e emozione" in 2016, even before being placed on the market.
Its scent is reminiscent of cream with vegetable notes and it has a light alcohol hint; the taste is fairly sweet with a hint of acidity and bitterness given by the liqueur. It is ideal with starters, aperitifs or even pasta and risotto dishes. To be able to fully enjoy its sensory properties, we recommend eating it at room temperature and keeping it wrapped until the very last moment.

The name “L’alfiere” (The Bishop) was chosen to represent the importance of this cheese which is a flagship product of the De’ Magi company. It is only made from goat milk and thanks to its harmonious flavor, it is loved even by those people who usually don’t like goat cheese.
Its ridged and bloomy rind is edible; the paste is creamy but compact and has a beautiful creamy color. The aroma is reminiscent of yeast, with the signature goat animal scent, while the sweet and very persistent flavor becomes more distinctive as maturation progresses.
It is a very versatile cheese: it can be used for a tasting selection, to dress risotto and pasta dishes or to prepare the filling for fresh pasta. It can even be used as an ingredient for a very original cheesecake.

- Lavatella -

This small cheese made from cow’s milk is called the "Lavatella" and originally comes from the region of Lombardy.
It is a washed-rind cheese, hence the name "Lavatella" (which comes from the Italian verb “lavare”, to wash). As a matter of fact, this cheese is washed as many as three times with brine, made with water and salt from Cervia.
The "Lavatella" is a small cheese with a big taste, since the salt is able to penetrate the rind.
