background:
Paul Maroon started his small winery in Napa Valley with the purchase of a beautiful estate vineyard near Howell Mountain, located in the Coombsville AVA. We first heard about them through the excellent Crauford Cabernets but he was already known for the quality of his Cabernet fruit and was selling it to Joseph Phelps for inclusion in their flagship Insignia wine. Now the grapes from this outstanding vineyard go into his Reserve Cabs and it clearly shows the quality and pedigree.
These grapes (100% Cabernet Sauvignon) were hand-picked in the middle of the night, when the temperature is ideal, then destemmed and hand sorted. Fermentation lasted 12 days, with 2 pumpovers per day, then macerated on the skins for 16 days. The wine was aged for 30 months in oak barrels, 1/3 new French oak and 2/3 neutral barrels.
tasting notes:
"This Cabernet opens with aromas of rich cherries, black currant, dark plums, with hints of lightly toasted vanilla, mint and crushed slate. The concentrated flavors further integrate with blackberries, tobacco, anise and earthiness. Structured, yet smooth tannins, balance the intense fruit and bright acid, leaving a lingering finish."
